Vegan and Sugar-Free Banana Cake
This delicious, vegan and sugar-free banana cake is super juicy and a perfect snack for in between – and also delicious with coffee and cake! When I had baked the cake, I could have eaten directly the entire cake. SO DELICIOUS!

How To Prepare the Vegan and Sugar-Free Banana Cake – The Step-by-Step Instructions
- Preheat the oven to ~ 350 °F (180 °C).
- If you don’t have ground hazelnuts at home, simply grind whole hazelnuts in a blender.
- Now mash 2 1/2 bananas with a fork on a plate and put them in a bowl. Add all other liquid ingredients (apple cider vinegar, almond drink, coconut oil) and mix.
- Add the remaining dry ingredients (spelt flour, ground hazelnuts, date sweetener, baking powder) and mix together with a hand mixer. Leave out the dark chocolate and dates for the time being.
- Coarsely chop the dates and gently stir them into the batter.
- Grease a small loaf pan with coconut oil (mine measured: 7.5″ x 9.8″ (19 x 25 cm)) and pour the dough into the pan.
- Coarsely chop the chocolate and slice the remaining half banana. Decorate the dough with both.
- Off into the oven! Bake in the oven for about 30 minutes. Before you take it out, do the toothpick test to see if the banana cake is good.
- Let cool and enjoy!
You Can Replace These Ingredients
Spelt flour: You can also replace the spelt flour with oat flakes, for example, or add a little more ground nuts.
Date sweetener: Here, of course, as always, you can choose your sugar alternative that you have at home, such as maple syrup or coconut blossom sugar.
Dates: If you don’t like dates, you can leave them out. I would then take a little more date sweetener or the sugar alternative of your choice.
Nuts: Here, of course, you can also use ground almonds, for example. I find it but with hazelnuts again a tick more interesting! If you have a nut allergy, you can also simply omit the nuts and use, for example, more spelt flour or replace them with oatmeal.
