Banana bread without flour
This banana bread without flour is super fluffy, juicy and a great snack for in between. In addition, it is purely vegetable and of course super delicious!
The banana bread without flour – the list of ingredients:
Bananas: The bananas should be as ripe as possible. The riper they are, the sweeter the bread will be.
Erythritol: I used erythritol for sweetening. This sugar alternative contains zero calories and works well as a substitute for regular sugar.
Oat drink: Is now a standard for me. Oat drink is my top favorite. But you can of course use soy, almond or any other form.
Ground Hazelnuts: Mine were already ground. But if you only have whole nuts there, you can also well just put them in a blender for about 10 seconds on high just before.
Cinnamon, baking powder & vanilla syrup: Cinnamon goes perfectly with this bread. Baking powder is of course obligatory and vanilla syrup is also great for sweetening.

FAQ about the banana bread without flour:
I don’t want to use erythritol/have none at home. What are the alternatives?
You can basically use any sweetener you like best. Dates are also delicious and also rich in healthy nutrients. I would chop them in a blender shortly before and then add them. Or maple syrup also fits very well!
Can I also bake the bread with flour?
Yes, sure! I have also baked the banana bread once with spelt flour. That also tastes very good. You could also use half spelt flour and the other half oatmeal. You could also use oat flour, for example, just grind the oat flakes in the mixer beforehand.
I don’t have hazelnuts at home/ I have an allergy to nuts. What to do?
If you don’t have hazelnuts at home, but you have other kinds of nuts, feel free to use them! If you have an allergy to nuts, then of course don’t use them. Here I would just use a little more oats.
Preparation steps:
Put 2 bananas in a blender together with a teaspoon of vanilla syrup and oat milk and blend.
In a bowl add the dry remaining ingredients. Mix everything well.
Now add the liquid ingredients to the dry ingredients.
Grease a small loaf pan (mine measured 18.5 cm (length) × 5 cm (height) × 12.5 cm (width)) with a little oil and add the dough. Place 1/2 banana on top (optional).
Bake at 200 °C for about 30 minutes.

- 50 g ground hazelnuts
- a little cinnamon
- a little salt
Instructions
- Put 2 bananas in a blender together with a teaspoon of vanilla syrup and oat milk and blend.

- Now add the liquid ingredients to the dry ingredients.
