Healthy Plum Muffins

Once again I got into the kitchen and baked some delicious muffins. This time something seasonal: plum muffins. Plums are great for baking and cooking and can be used in the kitchen in many ways. They are also super healthy. 

Plums offer lots of healthy fiber, protect our cells and are easy to digest even for sensitive stomachs. Doesn’t that sound good? That’s why I tried my hand at a few muffins straight away. Not only is this definitely the healthier option to conventional muffins, but they also taste fantastic. 

Interchangeable Ingredients and Tips

Before we get started with the recipe instructions, here are a few tips. 

Sweeteners: It’s always one thing with sweeteners: One swears by this sweetener, the other swears by the next. 

I think it’s always good to find alternatives to conventional refined sugar. However, there is probably no one top alternative. However, everything can be enjoyed in moderation. 

I like to use date sweetener (you can find it in the organic market) or at the moment also more often birch sugar. What you ultimately use for a sweetener is your choice.

Margarine: Yes, I know, it’s definitely not the healthiest option! That’s why I also like to talk about the “healthier” option. But here you could also replace margarine with coconut oil, for example, if you like the taste! 

Crumble: I actually did not add any additional sweetness. However, this will definitely not meet everyone’s taste. I would try the dough before and then add some sweetness if necessary!

How To Prepare the Healthy Plum Muffins

  1. Wash the plums, cut them in half and remove the stones. 
  2. Preheat the oven to ~350°F (180°C). Grease the muffin tray with a little margarine. 
  3. Put the margarine in a bowl with the date sweetener. If the margarine is still too solid because it was just taken out of the refrigerator, you should soften it in the microwave. Now beat the margarine and the sweetener with a hand mixer until fluffy. 
  4. Beat the eggs in a separate container and add. Mix well! 
  5. Then add the rest of the ingredients for the dough (spelt flour, baking powder). 
  6. Cut the plums into small pieces and fold into the dough. 
  7. Divide the batter among the muffin cups. Leave some space for the sprinkles (the muffin cups should be about 3/4 full). 
  8. To make the crumble, knead all the ingredients (soft margarine, salt and flour). If you like, add a little sweetener here! The dough should be relatively crumbly. 
  9. Spread sprinkles on top of muffins and bake in oven for 25 minutes. 
  10. Let cool & enjoy!

Shelf Life and Storage of the Plum Muffins

The muffins will keep in the refrigerator for two to three days. I would store them in an airtight container, so they will probably keep a little longer. 

You can also put them in the freezer. Here also simply use a suitable container for the freezer. So they keep up to three months.

Ingredients
 

For the Dough

  • 5.3 oz. plums 150 g
  • 2.1 oz. margarine 60 g
  • 1.4 oz. date sweetener 40 g
  • 2 eggs
  • 1 tsp. baking powder
  • 1 (4.2) cup (oz.) spelt flour 120 g

For the Crumble

  • 0.7 oz. margarine 20 g
  • pinch of salt
  • 1/3 (1.4) cup (oz.) spelt flour 40 g
  • sweetener

Instructions

  • Wash the plums, cut them in half and remove the stones.
  • Preheat the oven to ~ 350°F (180°C). Grease the muffin tray with a little margarine.
  • Put the margarine in a bowl together with the date sweetener. If the margarine is still too firm because it has just been taken out of the fridge, soften it in the microwave. Now beat the margarine and the sweetener with a hand mixer until fluffy.
  • Crack the eggs into a separate container and add them. Beat until well blended!
  • Then add the rest of the ingredients for the dough (spelt flour, baking powder).
  • Cut the plums into small pieces and fold into the batter.
  • Divide the batter among the muffin cups. Leave some room for the crumbles (the muffin cups should be about 3/4 full).
  • To make the crumble, knead all the ingredients (soft margarine, salt and flour). If you like, add some sweetener here! The dough should be fairly crumbly.
  • Spread the crumble on the muffins and bake in the oven for 25 minutes.
  • Let cool & enjoy!
