Berry Baked Oats
Oatmeal is usually cooked on the stove, but making it in the oven is a great change of pace and adds a new side to oatmeal! This time I added an egg, which changes the consistency nicely.
How To Prepare the Berry Baked Oats
- Preheat the oven to ~ 350 °F (180 °C).
- First, chop the walnuts into coarse pieces.
- Now mix the oatmeal, cinnamon, chopped walnuts and date sweetener in a bowl.
- Then follow with the liquid ingredients. First, crack the egg in a separate small bowl and make sure that no shell residues have fallen into the bowl with it.
- Then add the egg and the vegetable milk of your choice, the vanilla extract and a teaspoon of coconut oil to the dough. Stir until a firm dough is formed.
- Now follow with the blueberries. If the blueberries are fresh, first rinse them, then fold them into the batter.
- Then grease an ovenproof bowl with a little coconut oil and pour the dough into the bowl.
- Bake in the oven for about 30 minutes, until the ends are golden brown.
- Remove from the oven and let cool briefly, then you can enjoy!

Tips and Hints for the Ingredients
Oats: To make it a bit more protein-rich, you could also replace part of the oatmeal with either neutral (vegan) protein powder or, for example, vanilla protein powder.
Walnuts: If you don’t like nuts or are even allergic to them, simply omit them and replace them with 10 grams more of oatmeal, for example.
Date sweetener: You can also simply use your preferred means of sweetening, for example maple syrup or rice syrup.
