Healthy Plum Cake
On the weekend I baked as usual and since I had some plums here, I of course made plum cake. The plum cake is an absolute classic, vegan, and super easy to prepare.
In addition, it comes completely without conventional household sugar and wheat flour. By the way, it tastes best with vegan cream. I discovered this by chance last time in the organic market after I had tested it for the first time in a vegan-friendly restaurant.
How To Prepare the Healthy Plum Cake
- Preheat the oven to ~350°F (180°C).
- Put all the ingredients for the dough or base in a bowl and mix with a hand mixer. Caution: The dough seems very crumbly at first, so it is best to knead it well again with your hands. This will allow it to form well into a firm dough.
- Now grease a small springform pan (diameter approx. 8″ (20 cm)) with a little margarine and pour the dough into the pan. Work the dough into the mold with your hands.
- Then wash, core and quarter the plums. Then spread on the dough.
- For the crumble: Mix all ingredients in a bowl and crumble over the plums. Again, the dough is a little crumbly!
- Bake in the oven for about 30 minutes. Then let cool and enjoy!

- 3.2 oz. margarine 90 g
- 1.8 oz. date sweetener 50 g
- 1 tsp. baking powder
- 1 bottle of vanilla flavoring
- pinch of salt
Topping
- 10-14 oz. plums 300-400 g
Crumble
- 3/4 (3.5) cup (oz.) spelt flour 100 g
- 2.1 oz. margarine 60 g
- 1.8 oz. date sweetener 50 g
- 1/2 bottle of vanilla flavoring
- 1/2 tsp. cinnamon
