Marble cake is probably the classic at every coffee klatsch and Sunday cake! How about a vegan version? I’m sure that nobody will notice that easily, because this vegan marble cake tastes simply fantastic!

The preparation is also quick and easy. In no time at all you have conjured up a delicious cake! A marble cake probably suits (almost) every occasion: No matter if it’s a birthday, a coffee klatch or just for in between, you can never go wrong with a marble cake.

The dough for the marble cake is mixed in just a few minutes and you hardly need any kitchen utensils.

How Long Does the Cake Last?

At room temperature, the cake will last up to 4 days. It is best kept juicy under a cover. However, the cake should not be placed in the refrigerator, because it will lose its juiciness. It can be stored in the freezer without any problems.

How Do I Prepare the Vegan Marble Cake?

Preheat the oven to ~ 350 °F (180 °C).

First put the liquid ingredients in a bowl: the melted margarine, apple sauce, cidar vinegar, vanilla soy milk, agave syrup and vanilla flavoring. Stir the ingredients well.

Then add the dry ingredients: the spelt flour, the baking powder and the salt. Mix these to a dough. Cocoa powder and the plant drink are initially left out to create the special pattern of the cake later.



Coat a loaf pan with coconut oil. Pour three quarters of the dough into the loaf pan.
Blend the remaining dough in the bowl with the cocoa powder and the plant drink (e.g. oat milk) and spread it on the dough in the loaf pan. Use a fork to work the dark dough into the light dough in a spiral shape.

Now bake the cake in the oven for about 50 minutes. If the cake does not leave any remains when pierced with a fork or a skewer, you can take it out.

As toppings I put melted dark chocolate and chopped hazelnuts over the finished cake. This is of course only optional! You could also put a delicious chocolate icing over the cake.

  • 3.4 fl. oz. margarine melted (100 ml)
  • 1/2 cup apple sauce 160 g
  • 1 tbsp. cider vinegar
  • 3.4 fl. oz. vanilla soy milk 100 ml
  • 1/2 bottle of vanilla flavoring
  • 2 1/2 cups spelt flour 300 g
  • 2 tsp. baking powder
  • pinch of salt
  • 1/8 cup agave syrup 50 g
  • 2 tbsp. cocoa powder
  • 2 tbsp. plant drink e.g. oat milk
  • coconut oil for greasing

  • 1 oz. dark chocolate melted (30 g)
  • hazelnuts
