Easy cookies with dried apricots – super filling, vegan, gluten-free (when using 100% gluten-free oats!) and just heavenly! The cookies are perfect to prepare and you’re all set for a long day at work or a long car ride.

It couldn’t be any faster or easier, could it? You only need six ingredients and a blender, then you can start right away.
These easy vegan cookies with dried apricots are the perfect snack for in between to satisfy the small hunger. In addition, the oats make them full and gives you energy for the rest of the day.
They are super easy to prepare and last for a few days – either in the refrigerator or at room temperature.
I love it especially when I’m on the road to always have my own homemade snacks with me. That way I always know what’s in them and don’t reach for anything unhealthy!

Just four steps to easy vegan cookies:
- Preheat the oven to ~ 350 °F (180 °C).
- Place all ingredients in a blender and blend until a relatively firm dough mixture is formed.
- Portion the cookies on a baking sheet lined with parchment paper (the dough makes about 8 cookies).
- Bake in the oven for 8 minutes and ready!

- 12 soft dates
- 1.2 oz. coconut oil 35 g
- 1 tsp. baking powder
- 2.8 oz. almonds 80 g
- 12 dried apricots
Instructions
- Preheat the oven to ~ 350 °F (180 °C).
- Put all ingredients in a blender and blend until a relatively firm dough is formed.
- Portion the cookies on a baking sheet lined with baking paper (the dough makes about 8 cookies).
- Bake in the oven for 8 minutes and they are ready!
