Vegan Chocolate Cookies
These vegan chocolate cookies are super soft, chocolaty and so extremely delicious. Made with just a few healthy ingredients, they are not only super simple, but also lactose-free and without refined sugar.
Vegan Chocolate Cookies – Step By Step Instructions
- Preheat the oven to ~ 350 °F (180 °C).
- First, put all the dry ingredients in a bowl and mix (date sweetener, spelt flour, baking powder, salt).
- Then follow the liquid ingredients: Apple pulp, coconut oil and coconut milk. Mix with a hand mixer. Now chop the dark chocolate into pieces and fold into the batter.
- Using a tablespoon, form 8 cookies on a baking sheet lined with parchment paper.
- Bake in the oven for about 10 to 15 minutes.
Replaceable Ingredients
Dark chocolate: Here you can also replace this with e.g. chocolate chips or chocolate drops. But make sure that these are without milk, otherwise the cookies are of course no longer vegan 😉
Spelt flour: If you like it gluten-free, you can also replace the spelt flour with gluten-free oat flakes or ground almonds, for example.
Date sweetener: Of course you can also use maple syrup or coconut blossom sugar as a sugar alternative!

- 1.2 oz. date sweetener 35 g
- 1.6 oz. apple pulp 45 g
- 1 1/8 cup spelt flour 140 g
- 1 tsp. baking powder
- pinch of salt
- 1 fl. oz. coconut milk 30 ml
