How To Prepare the Salad?
- Cook the couscous according to package directions.
- Meanwhile, wash, clean and chop the vegetables, herbs and orange.
- Mix everything together with the couscous. For the dressing, add a tablespoon of olive oil, apple cider vinegar and a squeeze of fresh lemon. Season to taste with salt & pepper.
- If you like, you can now let the salad sit in the refrigerator for a few minutes, but it can also be enjoyed immediately!
How Long Does the Simple Couscous Salad Keep?
The fruity couscous salad can be prepared super easily and keeps up to three days in the refrigerator! So you can prepare it in the evening and then take it to work, university, etc. in the morning. It’s best to store the salad in an airtight container and enjoy it cold!

Replaceable ingredients
The salad is super variable. Theoretically, you can exchange as good as all ingredients. So you could prepare the salad several times a week and still have a lot of variety.
Vegetables: Here you can, for example, replace the tomatoes with peppers or carrots. I would prefer a vegetable that you can also enjoy raw, so that it still remains a “quick” couscous salad, but of course you can also fry mushrooms, for example.
Dressing: The dressing I have kept very simple as well. It would certainly also be delicious with some tomato paste and oil or a delicious honey mustard dressing!
Couscous: Of course, you can also replace it. For example, against quinoa, then the salad would also be gluten-free. If you have already prepared the quinoa before, so I usually do it, then you have so to speak a delicious salad prepared at lightning speed.
Extras: Of course, you can add a lot more. For example, I’ve eaten the couscous salad with roasted peanuts. This is also highly recommended! Gives the whole thing an extra crunch.
