Vegan Lentil Loaf With Cranberry Sauce and Red Cabbage

In a few days it’s already Christmas! Wow, the time has flown by. Generally, the pre-Christmas season always passes so quickly. At Christmas, we always have a somewhat more elaborate menu – just like most others probably do.

Traditionally, a roast must not be missing at Christmas, but this year I thought to myself: Why not try a lentil loaf? Last weekend I stood in the kitchen and cooked a lentil loaf for the first time and it was really good.

It also tasted good to my loved ones. So as a result, we now have lentil loaf with cranberry sauce, potatoes and red cabbage as a Christmas menu. For me, the perfect Christmas dinner!

This Vegan Lentil Loaf Is Not Only Delicious at Christmas!

Even though the lentil loaf goes extremely well with Christmas, you can of course prepare it outside of Christmas. A big advantage, in my opinion, is that you definitely have something from the roast for a few days afterwards.

So perfect for those who like to do Meal Prep. The lentil loaf will last in the fridge for up to five days. Due to its high protein content, it really fills you up. I have enjoyed eating it with a fresh salad the past few days.

The Ingredients Can Be Interchanged in Many Ways

You do not like walnuts? No problem! Then how about almonds or maybe macadamia nuts?

You can also swap out the carrots for celery, for example.

Not in the mood for cranberry sauce? Then you can also simply eat your favorite sauce with it.

The lentil loaf with cranberry sauce is

  • very high in protein

How Do I Prepare My Vegan Christmas Menu?

  1. Rinse the lentils and cook them according to package instructions until soft, about 20 minutes.
  2. Chop the walnuts and fry them in a pan until golden brown.
  3. Then wash and finely grate the carrots and apple.
  4. Peel and finely chop the onion. Then fry in a pan with canola oil.
  5. Now add the grated carrots and apple and sauté for about 5 minutes.
  6. Preheat the oven to ~ 350 °F (180 °C).
  7. Roughly mash the cooked lentils with a fork. Then put them in a bowl together with the sautéed vegetables, chopped walnuts and spelt flour. Mix everything well and season.
  8. Line a loaf pan with baking paper and pour the mixture into it.
  9. The lentil loaf is now baked in the oven for about 55 minutes.
  10. While the lentil loaf is in the oven, it is now time to make the cranberry sauce. Simply put the dried cranberries together with water, agave syrup and orange juice in a saucepan and simmer for about 15 minutes. Then puree.
  11. For a complete Christmas menu, now also peel potatoes and boil them in salted water for about 15-20 minutes.
  12. Also prepare the red cabbage.
  13. Finally, take the lentil loaf out of the oven and serve with the sauce as well as the cooked potatoes and the red cabbage.

  • 1 1/2 cups lentils 300 g
  • 33.8 fl. oz. vegetable broth 1000 ml
  • 2 carrots

  • 3.5 oz. walnuts 100 g

Spices

  • pepper
  • salt
  • rosemary

For the sauce

  • 2.8 oz. dried cranberries 80 g
  • 3 tbsp. agave syrup
  • 2 tbsp. orange juice
  • approx. 6.8 fl. oz. water 200 ml
