Vegan Butter Cookies

Ho, Ho, Ho! Are you all in the Christmas spirit yet? Christmas fever has gripped me these days. I diligently bake cookies every weekend. This time these delicious vegan butter cookies were made!

During Advent, I almost always start the day with Christmas carols – or listen to them during my daily walks. That puts me in a super mood.

So, a little tip by the way for all those who are currently stuck in the winter blues: Just listen to a few Christmas classics and the mood will be better again, at least it helps me quite well.

Last weekend I dared to make vegan “butter” cookies and I really have to say, that worked quite well!

Time is flying and Christmas will soon be here again, but before that, cookies need to be baked.

For me, baking cookies is simply part of the pre-Christmas season. It is a nice tradition to bake cookies with Christmas music on a quiet day.

And you don’t necessarily need eggs and milk, you can do it without and they still taste great!

I gave the butter cookies to family and friends as a gift. Even all non-vegans found them very tasty.

I also reduced the sugar. Instead of conventional sugar, I worked mostly with my now all-rounder agave syrup and that also worked very well.

The butter can be easily replaced with (vegan) margarine and generally it does not need many ingredients.

The vegan butter cookies are

  • dairy-free & egg-free
  • low-sugar
  • very tasty
  • perfect for the pre-Christmas season
  • a sweet gift for your loved ones

How To Make the Vegan Butter Cookies

1. Put all ingredients in a bowl and knead.

2. Form the dough into a ball and wrap it in an aluminum foil/ cling film.

3. Place in the refrigerator for at least 1 hour.

4. Then preheat the oven to ~ 350 °F (180 °C).

5. Sprinkle some flour on the cleaned work surface and roll out the dough thinly. You are welcome to top the cookies as you like: I melted dark chocolate and decorated half of the cookies with it. In addition, I sprinkled them with chopped almonds.

6. Cut out the cookies and place them on a baking tray lined with baking paper.

7. Then bake the cookies for about 8-10 minutes in the oven.

8. Let cool and enjoy!

Ingredients
 

  • 2 cups whole wheat flour 250 g
  • 3/4 cup vegan margarine 150 g
  • 2.1 oz. agave syrup 60 g
  • pinch of salt
  • 1 tsp. grated orange peel
  • 1 pkt. vanilla sugar

Toppings (optional)

  • dark chocolate
  • chopped almonds

Instructions

  • Put all ingredients in a bowl and knead.
