Easy Vegan Ratatouille

This ratatouille recipe is a fantastic vegan dish that is extremely low in calories and therefore ideal for losing weight! As a side dish it can be eaten with rice, quinoa or even bread.

What Is Ratatouille?

When I think of ratatouille, I always think of the animated film with the little rat Rémy, who becomes a cook in Paris. Who else knows the film?

Ratatouille is a vegetable dish from the French kitchen and can be eaten cold or hot. The main ingredients in a ratatouille are eggplant, onions, zucchini, tomatoes, peppers and garlic.

Ratatouille is:

  • full of healthy vegetables
  • low in calories and therefore a good dish to lose weight
  • a super side dish
  • aromatic
  • hearty
  • easy to prepare

How Do I Prepare Ratatouille?

Finely chop the onions and garlic clove into pieces. Wash the vegetables and cut into pieces.

First fry the onions and the clove of garlic in a pan. I usually don’t actually use oil, but with a coated pan I often don’t find it absolutely necessary and save extra calories.

When the onions and clove of garlic are lightly browned, add the sliced vegetables and fry briefly.

Then add about 3.5 fl.oz. (100 ml) of vegetable stock, tomato paste and a shot of red wine. You can also use a little more broth.

Now let it simmer on medium heat until the vegetables are soft. Season to taste with spices of your choice and that’s it!

  • 4 large tomatoes

  • vegetable broth

Instructions
