Simple Oatmeal Cookies – You Need These Ingredients

The cookies consist of very simple ingredients that probably almost everyone can find at home. Which ingredients you can replace, you can find out further down in the post. But now first to the actual ingredients that you need: 

Oats: Rolled oats are actually a basic ingredient for this recipe. It would be very good if you have both crunchy and tender oat flakes (or directly oat flour) at home. You can also make your own oatmeal from the tender oatmeal.  

Birch sugar: I have used birch sugar in this recipe as a sweetener. But you can also replace it. More details you will find below.

Peanut butter: Peanut butter is also substitutable. However, I personally find that it brings a very delicious taste, and I generally quite like peanut butter.

Baking powder/cinnamon /salt: Cinnamon also brings a very tasty flavor to the cookies. With the salt, I would take in any case not too much, a pinch is enough perfectly. 

Eggs: The only ingredient that is not purely vegan is the two eggs. Alternative suggestions can also be found below.

How To Prepare the Simple Oatmeal Cookies 

Tip in advance: If you don’t have oatmeal at home, simply put tender oatmeal in a blender and blend on high speed for five to ten seconds. 

Let’s start with the recipe: First, preheat the oven to ~ 350°F (180°C). 

Place hearty rolled oats, oat flour, birch sugar, baking powder, cinnamon and salt in a mixing bowl and mix well. 

Then add the two eggs and the peanut butter. The peanut butter should be relatively liquid, so it is easier to mix. Therefore, you should not store the peanut butter in the refrigerator beforehand. 

Mix everything together to form a dough, using a hand mixer if necessary. 

Tip: If you like raisins or dried cranberries, you can now add them to the dough. Raisins / dried cranberries go very well with the basic cookies!

Now line a baking sheet with parchment paper and form about 14 cookies from the dough – either with a tablespoon or with your hands. 

Flatten slightly and put them in the oven. Eight to ten minutes in the oven should be enough for the Oatmeal Cookies to turn golden brown.

FAQ About the Oatmeal Cookies

What Is the Shelf Life of the Cookies? 

The cookies will keep in an airtight container for up to a week. I kept them in the fridge, so you don’t run the risk of them getting too dry. 

Can I Also Prepare the Cookies Vegan? 

In fact, the only ingredients that are not vegan are the two eggs. 

You could try it with flaxseed eggs, for example. However, I have not yet tried a vegan variant myself. Therefore, I can not guarantee that it also works. 

Or you can replace the eggs, for example, with a vegetable milk alternative, so that the dough is not too dry. If you ever test this out, then please let me know in the comments! 🙂

What Ingredients Can I Substitute When Making Oatmeal Cookies? 

Sweetener: If you don’t want to use birch sugar/xylitol, you can of course replace it with any other sugar alternative, such as coconut blossom sugar or a liquid alternative like maple syrup. 

However, you may have to adjust the quantities again: Instead of 1.4 oz. (40g), as stated in the recipe, you will probably have to add a little more, since birch sugar is very sweet. 

It’s best to taste the dough first to make sure it’s not already sweet enough before adding more of your chosen sugar alternative. 

Peanut butter: If you have a nut allergy or maybe just don’t like peanut butter as much, you can substitute the nut butter for butter or a vegetable butter (for a vegan version). 

Here I would make sure that the butter is not too firm, so that you can easily work it into the dough.

  • prepared simply and quickly
  • dairy-free/lactose-free
  • vegetarian
  • without refined sugar
  • a very tasty snack for in between meals

  • 5 oz. seeded oat flakes 140 g
  • 3.5 oz. oat flour ground oat flakes (100 g)
  • 1.4 oz. birch sugar 40 g
  • 1.6 oz. peanut butter 45 g
  • 2 eggs

  • 1/2 tsp. cinnamon
  • pinch of salt
