Vanilla Crescents

Vanilla crescents have to be baked at least once a year. They are the classic of the Christmas season and every single year they taste so damn good.

But this year I dared to bake somewhat “different” crescents: healthy and also vegan. Stop, stop! Before you go on clicking and thinking: “Oh God, this can’t be anything.” I would like to convince you of the opposite.

Sure, the crescents don’t taste as ultra sweet as usual, but still the little bites are a real treat. The coconut oil gives them a light coconut note, which goes very well with the vanilla taste.

A Classic at Christmas Time – Times in Healthy & Vegan!

The little bites are prepared and baked in no time. They do not only work without eggs and milk, but also without refined sugar. So this cookies can be enjoyed without a guilty conscience.

The ground almonds and chia seeds provide healthy fats. The oats and the spelt flour make the crescents real fillers, so you don’t even need to eat that many of them.

The Instructions for the Sweet Vanilla Crescents

To begin, mix the chia seeds with water and let them swell in the refrigerator for about 15 minutes.

Now put the oat flakes, the ground almonds, flour, coconut oil, almond paste, sweetener and vanilla flavoring in a bowl and mix with a hand mixer.

Now add the chia seeds and mix together. Let the dough rest in the refrigerator for one hour.



After the hour, preheat the oven to ~ 350 °F (180 °C).

Then form crescents with your hands and place them on a baking tray covered with baking paper. Bake them in the oven for about 15 minutes.

Optional: Sprinkle with coconut flakes.

  • 1 tsp. chia seeds
  • 3 tsp. water
  • 1/2 cup oats 40 g
  • 1/3 cup ground almonds 40 g
  • 1/3 cup spelt flour 40 g
  • 2.1 oz. coconut oil 60 g
  • 0.4 oz. almond butter 10 g
  • 2 tbsp. agave syrup
  • 1 tsp. vanilla flavoring

Instructions

  • Now put the oats, the ground almonds, flour, coconut oil, almond paste, sweetener and vanilla flavoring in a bowl and blend with a hand mixer.
  • Now add the chia seeds and blend together.
