Rinse the lentils and cook according to package instructions until soft, about 20 minutes.
Chop the walnuts and fry in a pan until golden brown.
Then wash and finely grate the carrots and apple.
Peel and finely chop the onion. Then fry in a pan with canola oil.
Now add the grated carrots and apple and sauté for about 5 minutes.
Preheat the oven to ~ 350 °F (180 °C) .
Roughly mash the cooked lentils with a fork. Then put them in a bowl together with the sautéed vegetables, chopped walnuts and spelt flour. Mix everything well and season.
Line a loaf pan with baking paper and pour the mixture into it.
Now bake the lentil loaf in the oven for about 55 minutes.
While the lentil loaf is in the oven, it is now time to make the cranberry sauce. Simply put the dried cranberries together with water, agave syrup and orange juice in a saucepan and simmer for about 15 minutes. Then puree.
For a complete Christmas menu, now also peel potatoes and boil them in salted water for about 15-20 minutes.
